Our Story

Adinco is a family-owned, boutique distillery rooted in the tradition of crafting fine spirits. For four generations, the Diniz family has remained committed to producing spirits of exceptional quality, with a deep respect for both the process and the people who enjoy the final product. The story of Adinco goes back to the late 1800s, when Aleixo Diniz first began distilling Feni at his home in Quepem, a quiet town in South Goa. What began as a small effort rooted in curiosity and craft slowly took shape across generations. In 1970, Alleluia Diniz formally established Adinco, and by the year 2000, he had set up the distillery’s first production unit. Today, Adinco continues to operate from the same family home where it all began. Every bottle carries the legacy of those who came before—and the care of those who carry it forward.

Guided by this, Adinco has slowly expanded its portfolio, adding premium blends and rare spirits that remain true to the soul of the company.

Solomon is the fourth generation of a family devoted to the art of distilling. *Today, he leads Adinco Distilleries, building on a legacy that took a leap forward with his great grandfather's experiments and was shaped by his parents’ bold vision.* Their shared dedication laid the foundation for what Adinco stands for today—authenticity, craft, and a deep respect for origin. Growing up around stills and stories, Solomon learned early the importance of patience and precision. His mother, Connie, brought her strong business acumen to the brand, while his father, Alleluia, upheld the highest standards of quality. Their values continue to shape every bottle that leaves the distillery. Under Solomon’s leadership, Adinco has grown into a company that blends tradition with innovation. While staying true to its Goan roots, he has expanded the portfolio with new spirits like Tickle Gin and Alejandro Rum, alongside classics such as Tinto Heritage Feni. Each expression reflects his belief that great spirits are made with both skill and heart. Thoughtful and hands-on, Solomon is involved in every step of the process—from distillation to design. He supports local farmers, champions sustainable practices, and leads a women-powered workforce with quiet pride. As Adinco looks to the future, Solomon remains a steady guide, grounded in heritage and open to evolution, always inspired by the spirit of Goa.
